To make an easy chicken Marsala, you need 4 boneless chicken breast halves without skin, 1/4 cup of all-purpose flour, 1/2 teaspoon of salt and 1/4 of a teaspoon of pepper. You also need 1/2 teaspoon of dried leaf basil, 3 tablespoons of butter, 3 tablespoons of olive oil and 1/2 cup of Marsala wine. The recipe also requires 4 to 8 ounces of sliced fresh mushrooms.
Place the chicken breasts between two sheets of plastic wrap, and pound them until they are 1/4 inch thick. Thoroughly mix the salt, pepper, basil and flour together. Place the butter and oil in a heavy non-stick skillet, and place the skillet on the stove at medium heat. Coat the chicken in the mixture of flour, salt, pepper and basil.
Place the chicken on the skillet for two to three minutes until the side being cooked turns a light brown color. Flip the chicken to the other side, and add the mushrooms to the pan. Cook the chicken and mushrooms for approximately two minutes until the chicken is lightly browned.
Add the Marsala wine, cover the pan and reduce the heat to medium-low. Allow the food to simmer for 10 minutes before serving the chicken and mushrooms over pasta, rice or mashed potatoes.
