To make easy chicken fried rice, stir fry 1 cup of frozen peas and carrots, 1 chopped onion and 2 minced cloves garlic in sesame oil. When the vegetables are tender, add and scramble 1 egg. Add 3 cups of cooked rice, 1/2 pound cooked chicken and 1/4 cup soy sauce. Toss the ingredients in the pan until well mixed.
For a version with more variety in vegetables, stir fry 1/2 cup of frozen vegetables and 2 green onions in 1 teaspoon sesame oil until tender, then add 1 minced clove garlic and cook for another three seconds. Add 1 whisked egg with 1 teaspoon of sesame oil. Add 1 cup of cooked cubed chicken meat, 2 cups of cooked rice and 2 tablespoons of soy sauce. Toss until everything is combined.
For a pineapple chicken fried rice, toss 2 pounds of cubed chicken meat with 1 teaspoon of sesame oil. Season with salt and pepper. Sauté the chicken until it is cooked through. Add 1 tablespoon of vegetable oil, 1 diced onion, 3 minced cloves of garlic and 2 teaspoons of minced ginger and cook for two minutes. Add 1/2 cup of diced carrots, and cook one minute more. Stir in 2 sliced scallions, 4 cups of cooked rice, 1 cup of chopped pineapple and 3 tablespoons of soy sauce. Season the fried rice with salt and pepper before serving it.
