For an easy cherry cheesecake, organize 2 eggs, 2 8-ounce packages of cream cheese, 1 prepared pie crust, 1 teaspoon vanilla extract and 1/2 cup sugar. Also procure a can of cherry pie filling. The assembled batter is baked in a 350 degree Fahrenheit oven for approximately 30 minutes.
If the cream cheese is not at room temperature, place it in the microwave for several minutes on a low temperature, such as defrost, to make it more pliable. This facilitates proper mixing. Mix the cream cheese and sugar together with an electric mixer, making sure the consistency is smooth. Next add the eggs and the vanilla extract, repeating the process and achieving a similarly smooth consistency.
Pour the now-blended batter into the prepared pie crust. A graham cracker crust is ideal. Preheat the oven to 350 degrees Fahrenheit, and place the cake pan inside. After approximately 25 minutes has elapsed, check the cake for doneness. The sides should be slightly puffed out and the center capable of being jiggled without being runny. Continue cooking the cake another several minutes if the consistency is not right. Allow the finished cake to cool before spreading the cherry pie filling over the top. Place the finished, topped cheesecake in the refrigerator to chill several hours before serving.
