A simple recipe for cheesy squash casserole comes from the Food Network. It features sautéed squash with onion, Parmesan and Cheddar cheeses, and sour cream. Pour the ingredients into a casserole dish, and bake for 20 minutes. This recipe serves six to eight people and takes 40 minutes to prepare.
Start by preheating the oven to 350 degrees Fahrenheit. Grease a 2-quart casserole dish. Next, add 1 tablespoon of vegetable oil to a skillet, and place over medium heat. Add six medium, thinly sliced yellow squash, one large thinly sliced Vidalia onion, and one tablespoon of butter to the skillet. Sauté the ingredients until they are soft.
Next, transfer the sautéed squash and onion to a bowl, and add 1/2 cup of Parmesan cheese, 1 cup of Cheddar cheese, 1/2 cup of sour cream. Add salt and pepper to taste. Transfer the mixture to the greased casserole dish. In a separate bowl, crush one sleeve of crackers until they are a medium-to-fine texture. The Food Network recipe by Paula Deen recommends Ritz crackers. Sprinkle the crushed crackers evenly over the top of the squash mixture.
Bake the casserole in the oven for 20 minutes, until the top is golden brown and bubbly.
