Wash and grate the peel of 1 orange. Blend 1 teaspoon of orange peel with 6 slices of cooked bacon, crumbled. Combine the bacon mixture with 4-ounces softened cream cheese, and set aside.
Pound 6 boneless chicken breasts until they are 1/2 inch thick. Place 1 tablespoon of the cheese mixture in the center of each chicken breast. Fold in the sides of the chicken breast to enclose the filling. Secure each chicken breast with a toothpick.
Use 1/2 cup of breadcrumbs, and coat each stuffed chicken breast. Heat 2 tablespoons olive oil and 2 tablespoons melted butter in a skillet. Cook the stuffed chicken in the skillet for 10 minutes on both sides or until golden brown. Remove the stuffed chicken to a serving plate, and remove toothpicks. Squeeze the juice of 1 orange on the stuffed chicken, if desired.
For variety, the zest and juice of a lemon can be used in place of the orange. As an alternative to breadcrumbs, Kraft recommends using finely crushed crackers.Learn more about Cooking
