Cut 2 pounds of beef stew meat into 1-inch cubes, and add it to a slow cooker. Chop 10 ounces of fresh mushrooms into halves, dice 1 onion and mince 1 clove of garlic, and add these ingredients to the beef. Cover the meat and vegetables with 1 cup of beef broth. Add 2 teaspoons of paprika, then cover the slow cooker.
Set the temperature to low, and cook the ingredients for seven to eight hours. For a faster cook time, set the temperature to high and cook the ingredients for five hours.
Combine 1 cup of sour cream, 2 tablespoons of flour and 1 tablespoon of Dijon mustard. Stir the mixture into the meat and vegetables to combine. Cover the slow cooker, and cook for another 15 minutes on the low setting.
Cook 1 16-ounce package of egg noodles, following the package directions but without adding salt. Strain the noodles, and transfer them to a serving dish. Add the sauce from the slow cooker, and toss the noodles and sauce to combine. Garnish the pasta with 2 tablespoons of chopped fresh parsley.
