The banana walnut bread recipe from the Food Network is easy to make and has received many positive reviews from home cooks. It takes about 20 minutes to prepare and another hour to cook.
To make banana walnut bread, sift 1 1/4 cups of flour, 1 teaspoon of baking soda and 1/2 teaspoon of fine salt into a medium bowl, and then set it aside. In another bowl, whisk together 2 large eggs and 1/2 teaspoon of vanilla extract, and set this aside, too. In a third bowl, cream 1 stick of room temperature butter with 1 cup of sugar until it becomes light and fluffy. Pour the egg mixture in slowly, stirring constantly, and then add 3 mashed, very ripe bananas.
Add the flour mixture and mix until just blended. Fold in 1/2 cup of toasted walnut pieces, and pour the batter into a greased 9-by-5-by-3-inch loaf pan. Place the pan into a preheated 350-degree-Fahrenheit oven. Bake for approximately 55 minutes, or until a toothpick inserted in the center of the loaf comes out clean. Let the bread sit in the pan for five minutes, then transfer it to a wire rack, and allow it to cool completely. For best results, wrap the cooled bread in plastic wrap, and serve it the next day.
