For easy baked haddock, prepare 2 pounds haddock fillets, 4 ounces fresh chunk crabmeat, 1 stick butter, 1 large tomato and 2 cups prepared bread crumbs. Also gather 4 artichoke hearts, 1 cup shredded cheddar and a preferred nonstick cooking spray. Bake at 350 degrees Fahrenheit for approximately 20 minutes.
Coat a baking dish with the preferred nonstick cooking spray. Line the fillets of fresh fish along the entire bottom of the dish, ensuring that it is as evenly spaced as possible to facilitate consistent cooking. Combine the now melted butter, artichokes, crabmeat and breadcrumbs in a large mixing bowl. A garlic and herb flavored breadcrumb works particularly well with this preparation.
Slice the tomato thinly, then layer it on top of the fish in the baking dish. Next, take the shredded cheddar cheese, and sprinkle it atop the tomato. Finally, sprinkle the breadcrumb mixture on top of everything else, and place the baking dish into a preheated oven. After 20 minutes, check to see that the fish is done. The breadcrumbs should be golden brown, and the fish white, flaky and opaque. If unsatisfied, bake another five minutes or so.
For interesting variations of this dish, consider adding such ingredients as avocado, bell pepper or broccoli.
