An example of an easy recipe for making apple wine requires 6 pounds of apples, 3 pounds of sugar, 1 pound of chopped raisins, 8 pints of water and wine yeast. A bucket, strainer and large storage bottle are also necessary.
The first step in making apple wine is washing and cutting the apples. Next, place the apples in a large saucepan with the water and raisins. Bring this mixture to a boil and simmer for 15 minutes. Then, pour the mixture into a bucket with the sugar and stir until the sugar dissolves. Add the wine yeast when the must is lukewarm. Wine must refers to the freshly pressed juice that contains the seeds, stems and skin of the fruit.
Cover the must and leave it for three days. Then, use a strainer with a fine sieve to strain the liquid into a large sealable bottle. It is necessary to store this jar in a warm place for the fermentation process to happen. After the fermentation is done, transfer the wine into a clean bottle and store it in a cooler place for another couple of months.
Siphon the wine into bottles when it is clear and stable. Apple wine sometimes requires extra time for clearing due to the high amount of pectin in apples.
