To make Taste of Home's easy prune cake, gather 1 1/2 cups of sugar, 2 cups of all-purpose flour, 1 teaspoon baking soda and 1 teaspoon salt. Mix these ingredients together along with 1 teaspoon ground nutmeg and 1 teaspoon ground cinnamon. Add 3 beaten eggs, 1 cup of vegetable oil, 1/2 cup of buttermilk and 1 teaspoon of vanilla extract. Stir in 1 cup of chopped pitted prunes and 1 cup of chopped nuts. Pour the batter into a cake pan, and bake at 350 degrees Fahrenheit for 45 minutes.
To make the glaze, bring 1/2 cup butter, 1/3 cup of buttermilk, 1 teaspoon of vanilla, 1/2 teaspoon of baking soda and 3/4 cup of sugar to a boil for two minutes. Spoon the glaze over the cake as soon as it is removed from the oven. Allow the cake to cool before serving.
A variation on this recipe adds apples to the rest of the ingredients. Peel and shred 2 cups of apples, and mix into the batter before folding in the prunes and nuts.Learn more about Desserts
