One easy potluck recipe is a macaroni pasta salad, prepared by mixing cooked macaroni with mayonnaise, mustard, diced bell peppers and onions. Another easy recipe is a cheesy chicken and broccoli pie, preparing by mixing broccoli, chicken and cheese together, and topping it with a cheesy Bisquick crust.
To make the macaroni salad, cook 8 ounces of elbow macaroni according to package directions. Drain, and allow the macaroni to cool to room temperature.
Mix together 1 cup of mayonnaise, 1 tablespoon each of vinegar and mustard, and salt and pepper to taste in a large mixing bowl. Add in 1 cup diced celery and 1/2 cup each of diced bell peppers and sweet pickles. Stir in the cooked macaroni and 3 chopped, hard-boiled eggs. Stir gently, and chill in the refrigerator for at least one hour before serving.
To make the chicken and broccoli pie, preheat the oven to 400 degrees Fahrenheit, and coat a glass pie pan with cooking spray. Add 2 cups chopped broccoli, 1 cup shredded cheddar cheese, 1 cup diced and cooked chicken breasts, and 1 chopped onion to the pie pan. Combine 1/2 cup Bisquick mix, 1 cup milk, 2 eggs, 1/2 teaspoon salt and a dash of pepper in a mixing bowl, then pour over the mixture in the pie pan for the crust. Bake in the oven for 35 to 38 minutes, then sprinkle the crust with 1/2 cup of cheese and bake until the cheese is melted and bubbly. Serve hot.
