A simple potato casserole can be made by taking four potatoes, 2 cups of mashed potatoes, one onion, one pepper and six rashers of bacon, before cooking and layering the ingredients in a casserole dish to bake in the oven. Casseroles also keep well, so making plenty for the next day or so can be beneficial.

Line the bottom of the casserole dish with the mashed potatoes, then lightly fry the onion and pepper in a pan. Butter or oil can be used to fry these ingredients, depending on taste.
Add the onion and pepper to the casserole dish, then slice the remaining potatoes and layer them over the top of the onion and pepper. Dot some butter over the potatoes (cheese can also be added), then bake the casserole at 350 F for around 30 minutes.
While the casserole is cooking, fry the bacon in a pan until crispy. Remove the bacon from the pan and crumble into chunks. Once the casserole is ready, sprinkle the bacon shards over the top and serve.
