Peanut butter, peppermint and Nutella potato candy are easy potato candy recipes. These recipes use various methods for shaping the candy, including rolling the candy into a log, spreading it in a pan and pressing it into molds.
To make peanut butter potato candy, boil a small potato. Peel and mash the potato, slowly adding enough powdered sugar to make a stiff dough. Sprinkle some powdered sugar on wax paper, and roll out the potato dough thinly. Spread a jar of peanut butter over the dough, and roll into a log. Cut into slices, and chill before serving.
To make peppermint potato candy, beat 3/4 cup of mashed potatoes prepared without milk and butter with 2 teaspoons of butter and 1 teaspoon of peppermint extract. Slowly beat in 7 1/2 cups of powdered sugar. Press into a foil-lined pan. Melt 2 cups of semisweet chocolate chips and 1 tablespoon of shortening in a microwave. Stir until smooth, and spread over the potato mixture. Refrigerate until set, lift the candy out of the pan and cut it into 1-inch squares.
To make Nutella potato candy, microwave a 5-ounce peeled potato until cooked. Mash the potato, and gradually add 1 1/2 cups of powdered sugar. Mix until a dough forms. Add 1/4 cup of Nutella, and form into balls.
Alternatively, make shamrock shaped candy by pressing the dough into a shamrock mold. Press the candy into another shamrock mold sprinkled with green sugar, remove and repeat with the rest of the dough.
