To make an easy pork and rice casserole, brown 1 pound of cubed lean pork in 1 tablespoon of oil. Add 1/2 cup chopped onion, 1 cup chopped celery, 2 cups cooked rice, 1 can cream of chicken soup and 3 tablespoons of soy sauce and bake.
Bake the casserole in a 2-quart covered casserole dish at 350 F for 1 hour.
To make an easy pork chops and rice casserole, brown 4 thick, boneless pork chops in oil in a frying pan. Mix 1 1/2 cups of long grain rice and 1 1/2 ounces of dry onion soup mix, sprinkle the mixture with pepper, and place it in the bottom of a baking pan sprayed with cooking oil. Mix 3 1/2 cups of boiling water into the rice mixture just as the pork chops finish browning. Place the browned pork chops on top, and cover the dish with foil. Bake the casserole at 350 F for about 45 minutes.
To make a spicier pork and rice casserole, brown 1 1/2 pounds of pork strips in oil, adding 1 1/2 teaspoons of salt, 1/2 teaspoon freshly ground black pepper, 2 teaspoons chili powder, 1 chopped onion and 1/2 cup chopped celery. Cook the mixture for 5 minutes. Add a 20-ounce can of tomatoes and 1/8 teaspoon of Tabasco sauce, and simmer the mixture on low for 30 minutes. Add 3 cups of parboiled rice, place the mixture in a greased casserole, top with grated cheese, and bake.
