To make an easy pomegranate and arugula salad in about five minutes, begin by preparing a vinaigrette dressing using 1/4 cup pomegranate molasses, the juice of 1/2 a lemon, 2 tablespoons honey, 2 tablespoons red wine vinegar, 3/4 cup olive oil, and salt and pepper to taste. Toss this dressing with 6 cups of lightly packed arugula, the seeds of 1 pomegranate, 1/4 cup shaved Parmiagiano-Reggiano cheese, 1/4 cup toasted walnut and 1 sliced shallot. This salad serves four people.
Another easy pomegranate salad recipe features Gorgonzola cheese, pears and a champagne vinaigrette. Start by preparing the salad. Add 8 cups of baby spinach or romaine lettuce to a decorative bowl. Arrange thin slices of 1 ripe pear around the edge of the bowl. Crumble 2 ounces of Gorgonzola cheese on top of the greens, and add 1/3 cup pomegranate seeds. Drizzle the salad with 1 tablespoon honey before sprinkling on some fresh black pepper.
To make the champagne vinaigrette dressing, combine 1/4 cup champagne vinegar, 1 teaspoon Dijon mustard, 1/2 teaspoon minced garlic, 1 tablespoon fresh lemon juice and 1/4 teaspoon freshly cracked black pepper.
