To make the Basic Polenta recipe, start by boiling 6 cups of water in a large saucepan, and then stir in 2 teaspoons of salt. Stir in 1 3/4 cups yellow cornmeal, and reduce the heat. Cook the cornmeal mixture for about 15 minutes, until the cornmeal thickens. Add 3 tablespoons butter to the polenta until it is melted.
For the Baked Polenta with Mushrooms recipe, prepare the polenta first. Then, cook 3/4 pound of mushrooms seasoned with 1/4 teaspoon salt, 1/4 teaspoon sage and 1/8 teaspoon pepper for five minutes in 1 tablespoon butter and olive oil. Repeat with another 3/4 pound of mushrooms. Pour half of the polenta into a buttered 8-by-8-inch baking dish, then top with half of the mushrooms, 3 ounces Fontina cheese and 2 tablespoons of Parmesan cheese. Repeat with another layer of polenta, mushrooms and cheese.
Bake the casserole at 350 degrees Fahrenheit for 15 minutes, until the cheese is melted and bubbling. Pair the casserole with a red wine, such as a Bourgogne rouge.
