To make pizelle cookies, combine flour, sugar, eggs, butter, baking powder and vanilla or anise extract. Cook the dough on a pizelle cookie press according to the instructions for the cookie press.
To make classic pizelle cookies, use a hand mixer to blend 3 large eggs and 3/4 cup of sugar in a bowl until the mixture is slightly thickened. With the mixer on low speed, add 1/2 cup of melted unsalted butter and 1 tablespoon of vanilla or anise extract to the mixture. Blend to mix the ingredients, then add 1 3/4 cup of all-purpose flour and 2 tablespoons of baking powder.
Continue blending the ingredients until the mixture is well-combined, then spoon the recommended amount of dough onto the heated pizelle press. Allow the cookies to bake until the indicator light turns green, then remove the cookies with a spatula. Fold the cookies while they are warm to make cannoli shells or cones for ice cream.
To make chocolate pizelle cookies, stir 2 ounces of chopped bittersweet or semisweet chocolate into the dough before baking in the cookie press. To make anise-flavored pizelle cookies, add 1 teaspoon of anise seeds to the batter before cooking. Other flavorings, such as maple or lemon, can be added to the dough in place of anise.
