Pineapple cranberry punch, Country Time pineapple punch and ginger pineapple sparkling punch are some easy recipes for pineapple punch. These recipes are available on Dole.com, KraftRecipes.com and Epicurious.com, respectively.
To make Dole's pineapple cranberry punch, combine 1 chilled 46-ounce can of Dole pineapple juice, 1 chilled 32-ounce bottle of cranberry cocktail, 1 liter of chilled ginger ale and 1 6-ounce can of thawed frozen orange juice concentrate in a punch bowl. Garnish with orange slices, strawberry halves and mint. Add ice cubes immediately before serving.
For Country Time pineapple punch, mix 1 chilled 48-ounce can of pineapple juice, 2 chilled 12-ounce cans of carbonated lemon-lime beverage, 2 cups of cold water and 1/2 cup of Country Time lemonade flavor drink mix in a punch bowl. Refrigerate, or serve immediately. Before serving, garnish the punch with lemon slices and maraschino cherries.
Epicurious' ginger pineapple sparkling punch is a more sophisticated take on the beverage. First, make ginger syrup by boiling 1 1/2 cups water with 1 cup sugar and 1 cup thinly sliced fresh ginger. Simmer for about 10 minutes, then steep uncovered for another 15 minutes. Strain out the ginger pieces, and refrigerate the syrup for at least 2 hours before adding it to the punch. For the punch, combine 3 cups chilled pineapple juice, 1/4 cup fresh lemon juice, 1/4 cup fresh lime juice, 3 cups sparkling water and 4 cups ice cubes in a bowl or pitcher.
