To make an easy pineapple chicken, combine the juice of one lime, the juice of one lemon, one tablespoon apple cider vinegar, and a pinch of salt and pepper in a bowl. Add four boneless, skinless chicken breasts to this, and let it marinate in the refrigerator for an hour.
Make sure to cover the chicken with plastic wrap before putting it in the refrigerator. While the chicken is marinating, slice a pineapple into eight rings. Place the chicken on a lightly oiled grill that has been preheated to medium high, and grill the breasts for at least five minutes on each side. While the chicken is cooking, lightly brush the rings of pineapple with oil, and grill them for around three minutes on each side.
When the chicken and pineapple are finished, place one of the pineapple rings on each piece of chicken. Then drizzle all the pieces of chicken and pineapple with approximately two tablespoons of teriyaki sauce and serve.
This recipe was created by Stephanie Spancake and featured on ABC television's The Chew. According to Spancake, the secrets to the recipe is adding the teriyaki sauce after the chicken has finished cooking and making sure the chicken marinates for at least an hour.
