To make a simple pecan cobbler gather 3 cups of coarsely chopped pecans, 1/3 cup melted butter, 1 tablespoon of vanilla extract, 2.5 cups of light corn syrup, 5 eggs slightly beaten and 2.5 cups of granulated sugar. For the crust gather 1 cup of all-purpose flour, 1/2 cup butter, 1/4 teaspoon salt, 1/2 cup cold water and 1 cup of oat flour. To make the oat flour process one cup of regular oats until it resembles a fine powder.
Preheat the oven to 350 degrees Fahrenheit and lightly grease a 13x9 baking pan. In a large bowl, mix together the syrup, butter, sugar, vanilla and eggs until they are well combined. Pour about 1/3 of this mixture into the prepared pan. Add the pecans to the remaining filling mixture and set it aside.
To make the crust, combine both flours in a bowl and add the salt. Mix in the chopped butter with a fork and gradually add the cold water until the dough becomes firm. Transfer the dough to a lightly floured surface, and knead it gently until it is no longer sticky. Roll out the dough and place it over the baking pan.
Pour the remaining filling mixture on top of the dough, and bake the cobbler for about 50 minutes or until the center is set. Allow the cobbler to cool for 20 minutes before serving.Learn more about Desserts
