To make a simple pecan cobbler gather 3 cups of coarsely chopped pecans, 1/3 cup melted butter, 1 tablespoon of vanilla extract, 2.5 cups of light corn syrup, 5 eggs slightly beaten and 2.5 cups of granulated sugar. For the crust gather 1 cup of all-purpose flour, 1/2 cup butter, 1/4 teaspoon salt, 1/2 cup cold water and 1 cup of oat flour. To make the oat flour process one cup of regular oats until it resembles a fine powder.
Preheat the oven to 350 degrees Fahrenheit and lightly grease a 13x9 baking pan. In a large bowl, mix together the syrup, butter, sugar, vanilla and eggs until they are well combined. Place the pie crust in the baking dish. In a bowl, stir 2 1/2 cups light corn syrup, 2 1/2 cups packed brown sugar, 1/2 cup melted butter, 4 1/2 teaspoons vanilla and 6 beaten eggs. Stir in 2 cups coarsely chopped pecans, and spoon half the filling into the baking dish. Place a second premade pie crust over the filling, and spray with cooking spray. Bake for 14 to 16 minutes, and reduce the heat to 350 degrees Fahrenheit. Spoon the rest of the filling on top, and bake for another 30 minutes.
