An easy and popular appetizer from PaulaDeen.com is chili con queso dip, which calls for just four ingredients and requires minimal cooking. Another is the chocolate chip cheese ball, which does not require cooking.
For the chili con queso dip, melt 1 pound of processed cheddar cheese over medium-low heat in a saucepan. After the cheese melts, add a 16-ounce can of diced tomatoes (drained), a 4-ounce can of diced green chilis and 2 teaspoons of hot sauce. Stir until well-blended, and pour into a small casserole dish.
To make the chocolate chip cheese ball, place an 8 ounce package of cream cheese and 1/2 cup softened butter in a medium bowl. Beat with an electric mixer until smooth. Add 1/2 cup of confectioners' sugar, 2 tablespoons of unsweetened cocoa powder, 2 tablespoons of firmly packed brown sugar and 1/2 teaspoon of vanilla extract. Beat again until well-blended, then add 1 cup of mini marshmallows and 3/4 cups of semisweet chocolate chips. Stir to combine, cover and place in refrigerator for two hours before forming into a ball. Roll the ball in 1 cup of finely chopped toasted almonds to coat. Serve on a tray alongside graham crackers and assorted fruit for dipping.
