Drain and rinse a 15-ounce can of chickpeas, patting them dry with a paper towel. Fill a large pot with about 2 inches of vegetable oil, and heat until the oil reaches 350 to 375 degrees Fahrenheit.
Lower the chickpeas into the oil with a large metal strainer, and cook for about 3 minutes. Transfer the cooked chickpeas to a paper towel to drain before tossing them in the spice mixture.
For Real Simple's blue cheese and fig crostini, heat an oven to 400 degrees F. Cut one small baguette into about 24 slices.
