For easy party appetizers, top Ritz crackers with a soft herb cheese, garnish with a fresh basil leaf and add a half of a cherry tomato. For something sweeter, layer peanut butter, a banana slice or two and a drizzle of chocolate sauce.
For a mock crab au gratin, spray a small skillet with cooking spray and add 1 minced garlic clove and 2 tablespoons each of finely chopped onions, green peppers and celery. Cook until tender and set aside. In a bowl, combine 4 ounces of shredded pepper jack cheese with an 8-ounce package of softened cream cheese, an 8-ounce can of imitation chopped crab meat and a squirt of lemon juice. Spread the mixture into a 9-inch pie plate, finely crumble seven Ritz crackers and sprinkle them on top. Heat at 350 degrees Fahrenheit for 25 minutes until golden brown, and serve it as a spread for additional Ritz crackers.
