Mix together an egg, a cup of flour, and a teaspoon of baking powder; gradually stir in a cup of milk, until smooth. Pour the batter onto a hot, greased griddle and bake until bubbles form on the edges. Flip the pancake and bake for one to two more minutes.
Another easy pancake recipe uses a few more ingredients, including sugar and oil. Stir together a cup of flour, two tablespoons sugar, two teaspoons baking powder and a little salt. Make a well in the center of the dry ingredients and add in one beaten egg, a cup of milk and two tablespoons of vegetable oil. Bake pancakes on a hot, oiled griddle until cooked through.
If the batter is too thick, add more milk to thin it out. If the batter is too thin, add more flour until it is thickened. To avoid using vegetable oil, swap it for two tablespoons of melted butter. Once one batch of pancakes is cooked, place them on a baking sheet in an oven preheated to 200 degrees Fahrenheit until ready to serve. The griddle may need to be oiled again before baking a second batch.
Top the cooked pancakes with butter and maple syrup, or add confectioner's sugar, honey, fruit preserves, whipped cream or chocolate syrup.
