Food Network has a simple and easy-to-follow recipe for orange chicken made with boneless chicken thighs. The recipe takes 40 minutes to prepare and cook, and yields four servings.
To make Food Network's recipe, combine 2 tablespoon cornstarch and 4 egg whites. Beat for one minute, and add 4 boneless chicken thighs that have been cut into small pieces. Let sit, and set aside.
In a skillet, combine 1/2 cup orange juice, 1 tablespoon soy sauce, 1 packed tablespoon brown sugar, 1 tablespoon rice wine vinegar, 1/4 teaspoon sesame oil, a dash of salt, a dash of crushed red pepper, 1 clove of pressed garlic and a little grated or minced ginger. Heat for five minutes, or until the mixture starts to thicken.
In a bowl, combine 1 teaspoon cornstarch and 1/4 cup water. Add 1 to 2 tablespoons of the cornstarch mixture into the sauce, and stir for one minute. In a pot, heat 2 inches of vegetable oil to 350 degrees F, and carefully place the chicken into the oil. Cook for three to four minutes, or until golden all over. Remove onto a paper-towel-lined plate for two to three minutes, and then place back into the oil for one minute. Toss the chicken in the sauce.
