The Food Network's New York-Style Cheesecake is a simple recipe, although the baking and cooling times take several hours. In a bowl, combine 1 cup of graham cracker crumbs, 2 tablespoons of sugar and 2 tablespoons of softened butter with a fork. Press the mixture into the bottom of a springform pan to make the crust. To make the filling, cream together 24 ounces of cream cheese and 2 cups of sugar once the cream cheese reaches room temperature. Beat in 3 room-temperature eggs individually, and add 1 tablespoon of vanilla extract.
Pour the filling into on the crust, and bake the cake at 275 degrees Fahrenheit for 90 minutes. Turn off the oven, but do not remove the cheesecake for another three hours, and then chill it for eight hours before serving.
In another good recipe, bake the crust separately at 300 degrees Fahrenheit for 13 minutes. Meanwhile, make the filling by whipping 40 ounces of cream cheese until it is fluffy and then gradually adding in 1 1/2 cups of granulated sugar and 1/8 teaspoons of salt. Scrape down the edges of the bowl before adding 1/3 cup of sour cream, 2 teaspoons of lemon juice and vanilla extract each, 2 egg yolks and 6 eggs, one ingredient at a time. You can make a strawberry topping for garnish.
