Some easy muffin recipes include basic muffins, blueberry thunder muffins, Mary Lou's muffins and maple oatmeal muffins. The basic muffins recipe uses only a flour, baking powder, salt and sugar mixture combined with eggs, milk and butter.
Combine 2 cups of white flour, 1 tablespoon of baking powder, 1/2 teaspoon of salt and 2 tablespoons of sugar in a bowl. In another bowl, beat together 1 egg, 1 cup of milk and 1/4 cup of melted butter. Stir the wet ingredients into the flour mixture, and spoon the batter into a greased muffin pan. Bake at 375 degrees Fahrenheit for 20 to 25 minutes.
To make blueberry thunder muffins, cream together 1/2 cup of softened butter and 1 cup of sugar. Add 2 eggs, 1/2 cup of milk and 1 teaspoon of vanilla. Fold in 2 cups of all-purpose flour, 2 teaspoon of baking powder and 1/2 teaspoon of salt, then stir in 2 cups of blueberries. Pour the batter into muffin cups, and sprinkle the top with cinnamon sugar. Bake for 25 to 30 minutes at 350 degrees Fahrenheit.
You can add a streusal topping to any muffins by combining 1/4 cup of all-purpose flour, 1/3 cup of brown sugar and 1/2 teaspoon of ground cinnamon. Cut 2 tablespoons of butter into the flour mixture until it turns crumbly. Sprinkle over the muffins.
