Shrimp tacos is an easy microwave dinner recipe. The recipe makes a shrimp taco filling with ingredients such as black beans, limes, avocado and onion. It takes 10 minutes to prepare and yields 4 main dish servings.
To make the tacos, combine 1 tablespoon of olive oil, 1 small onion and 1 small jalapeño chile in a large microwave-safe bowl. Microwave it on high for four minutes, stirring once. Add 2 cups of corn kernels and 1 can of black beans, cover the bowl with vented plastic wrap, and microwave on high for two minutes. Add 1 pound of shelled and deveined medium shrimp. Cover the bowl again, and microwave for three to four minutes until the shrimp becomes opaque.
For the avocado salsa, squeeze 2 tablespoons of juice from a lime. Cut another lime into 8 wedges, and set it aside. In a small bowl, combine the lime juice with 1 avocado and 1/4 cup of fresh cilantro.
Right before serving, place a stack of 8 flour tortillas between damp paper towels on a microwave-safe plate, and microwave on high for 15 to 20 seconds. Distribute the shrimp mixture and the avocado salsa among the tortillas, fold them over, and serve them with lime wedges.
