Make a quick and easy chocolate cake in the microwave using common baking ingredients, including flour, cocoa powder and eggs. This Food Network recipe makes a single serving and cooks in about 2 minutes in the microwave.
Combine the ingredients for the batter in a large, microwave-safe mug. Measure 1/4 cup of flour, 5 tablespoons of sugar and 2 tablespoons of cocoa powder first. Next, add the wet ingredients. Use one egg, 3 tablespoons of milk and 3 tablespoons of vegetable oil, as well as a splash of vanilla extract. Whisk all ingredients until the batter is smooth.
Place the mug in the microwave, and cook it for 2 minutes. Cooking times vary from one microwave to another, so check for doneness before eating. Insert a toothpick into the center of the cake, and pull it out. If it comes out clean or mostly clean, the cake is ready to serve. If the toothpick comes out covered in batter, return the mug to the microwave to cook for another 30 seconds. Continue to check for doneness, and cook in 30-second intervals until the batter is cooked. The cake should look light and puffy, and the edges should separate a bit from the sides of the mug. Eat this cake warm directly from the mug with a spoon or a fork.
