To make lamb kabobs, cut 2 pounds of lamb into cubes. Whisk together the juice and zest of 1 lemon, 1 minced onion, 1 clove of minced garlic, 1/2 cup red wine, 1 tablespoon chopped mint, 1 tablespoon chopped rosemary, 1 teaspoon salt and 1 teaspoon black pepper. Marinate the cubed lamb and 12 cubed porcini mushrooms in the mixture for 6 hours.
When this is complete, thread the lamb and mushrooms onto skewers, alternating pieces with cubed yellow peppers, cherry tomatoes and pearl onions. Place two of each ingredient on a skewer. After the skewers are prepared, brush with the excess marinade and cook on the grill for six to 10 minutes. Turn the kabobs occasionally during cooking.
For crab salad, mix 1 pound lump crab meat, 1/2 cup Greek yogurt, 1 small diced cucumber, 2 diced scallions, 2 tablespoons chopped dill, 2 tablespoons chopped mint, the zest of 1 orange, 4 tablespoons olive oil, 1 clove minced garlic and 1 teaspoon kosher salt. Mix the crab salad in a large bowl on ice to keep the mixture cold. Serve on pitas, if desired, and grill the pita bread before serving.
