Hot pot, risotto, salmon rarebit, and a basil omelet are easy meals for one. Make hot pot noodles by cooking chopped bacon, green onions, peas and paprika. Cook for two minutes. Add 1 cup stock and a splash of Worcestershire sauce. Add stock and simmer. Serve hot.
Another quick one-person meal is spinach ravioli lasagna. Preheat the oven to 375 degrees Fahrenheit and use cooking spray in a 11-by-7 inch baking dish. Toss 1/3 cup pesto and 6 ounces chopped spinach in a mixing bowl.
In a small bowl, combine 15 ounces of Alfredo sauce with 1/4 cup vegetable broth. Spoon 1/2 cup into the baking dish and top with half of the spinach mixture. Layer half of a 25-ounce package of frozen cheese ravioli over the spinach.
Repeat the layers and top with remaining Alfredo sauce before baking for 30 minutes in the oven. Remove the dish from the oven and sprinkle with 1 cup mozzarella. Bake for another five minutes and garnish with basil. Serve hot.
