Florence recommends heating 2 pounds of button mushrooms in 1/4 cup olive oil in a skillet for three minutes. Remove them from the heat, and add the zest and juice of 2 lemons, 3 sliced garlic cloves, a small bunch of thyme and 2 bay leaves. Add an additional 1/4 cup olive oil, and season with salt and pepper to taste. Serve at room temperature.
Real Simple?s recipe begins with heating 10 ounces of button mushrooms in 3 tablespoons olive oil and 1/2 teaspoon salt over high heat for seven to nine minutes. Remove the skillet from the heat, and combine the mushrooms with 1/2 cup dry white wine, 1/4 cup vinegar and 1/4 of a small red onion, sliced. Add more salt and pepper, and refrigerate the mushrooms at least eight hours before serving.
For avocado-stuffed marinated mushrooms, marinate 1 pound of button mushrooms with the stems removed in 2/3 cup prepared balsamic vinegar salad dressing for 30 minutes.
