To make Food Network's recipe for hot cocoa, combine 2 cups powdered sugar, 1 cup Dutch-process cocoa, 2 1/2 cups powdered milk, 1 teaspoon salt and 2 teaspoons corn starch. Add 1 pinch of cayenne pepper, or more to taste. To make hot cocoa, fill approximately half a mug with powder mix, then fill to the top with hot water, milk or milk alternative. Stir well.
For easy homemade hot chocolate mix, combine 1 cup granulated sugar, 6 ounces finely chopped unsweetened chocolate, 1 cup unsweetened cocoa powder, 1/2 cup dry milk powder and 5 teaspoons cornstarch in a food processor. Add 1 teaspoon vanilla extract and 3/4 teaspoon kosher salt. Process for 30 seconds to 1 minute, until the ingredients are well blended into a fine powder. For hot cocoa, use roughly 1 part cocoa mix to 4 parts liquid.
Make decadent hot chocolate mix by combining 1/2 cup granulated sugar, 1 tablespoon cornstarch, 3 ounces chopped bittersweet chocolate, 1/2 cup cocoa powder and 1/4 teaspoon vanilla extract. Add 1/8 teaspoon fine sea salt and process into a fine powder.
