Hummus is an easy snack to make at home. As a homemade snack, it is highly nutritious, less expensive than buying it at the store and it is made quickly by using canned chickpeas. Other easy snacks are After School Snack Mix and Stuffed Celery Sticks.
To make the hummus, combine 2 cans rinsed and drained chickpeas with 1/3 cup lemon juice in a food processor. Add 1/4 cup tahini or cashew butter and 2 cloves garlic, and process. Add up to 1/4 cup water until the mixture is smooth when processed. Add coarsely ground salt to taste.
To make the After School Snack Mix, combine 8 cups Chex cereal with 1 cup of raisins and 1 cup of M&Ms. Add 2 cups of small round pretzels. Mix together.
Make Stuffed Celery Sticks by chopping celery into 3- or 4-inch pieces. Stuff with your choice of ingredients. Some good options are cream cheese and olives, cream cheese and raisins, or natural peanut butter or almond butter topped with raisins.
Good vegan options for easy snacks are dried fruits, such as dates or apricots, apples and natural peanut butter, and chips and guacamole. To make the guacamole, mash 2 ripe avocados. Add 2 minced garlic cloves and coarsely ground salt to taste. Mix together, and serve with corn chips.
