To make easy ground beef lasagna, brown 1 pound of ground beef and simmer with 1 32-ounce jar of spaghetti sauce. Next, mix 32 ounces of cottage cheese, 2 cups of mozzarella cheese, 2 eggs and 1/4 cup of grated Parmesan cheese. Season the cheese mixture with 2 teaspoons of dried parsley and salt and pepper to taste. Layer the sauce and cheese with 3 layers of 3 cooked lasagna noodles, and bake for 55 minutes at 350 degrees Fahrenheit.
To prevent the bottom noodles from drying out, spread 3/4 cup of the sauce mixture on the bottom of the casserole dish. To keep the rest of the lasagna from drying out, add 1/2 cup of water to the edges of the lasagna, and cover it with aluminum foil while baking. Uncover the dish for the last 10 minutes of baking to help the top layer of cheese turn golden brown.
To keep the middle layers even, use 1 3/4 cup of the cheese mixture and 1/4 cup of the sauce for each one. For the top of the last noodle layer, spread on the remaining sauce and top with 1 cup of shredded mozzarella cheese and 1/4 cup of grated Parmesan cheese. For an extra tip, line the entire casserole dish with aluminum foil to cook the food evenly, keep it moist and make clean-up easy.
