Some easy make-ahead brunch recipes include overnight Tex-Mex egg bake, cinnamon-bun waffles and pumpkin and cranberry breakfast strata. To make the overnight Tex-Mex egg bake, layer a casserole dish with 5 cups of southern-style hash brown potatoes, 12 ounces of cooked sausage, 1 can of green chilies and 1 1/2 cups of shredded Colby-Monterey Jack cheese.
Pour a mixture made from 6 eggs, 1 1/2 cups of milk, and 1/4 teaspoon of salt over the casserole, and top it with another 1 1/2 cups of cheese .Refrigerate the dish overnight, and bake it at 350 degrees Fahrenheit for 50 to 60 minutes.
To make the pumpkin and cranberry breakfast strata, combine 7 cups of bread cubes and 1 1/4 cups of frozen whole cranberries in layers to a casserole dish. Whisk together 1 can of pumpkin, 3 cups of milk, 3 eggs and 1/2 cup of brown sugar, and season it with 1 teaspoon each of ground cinnamon and vanilla, 1/2 teaspoon of ground ginger, 1/4 teaspoon of ground nutmeg, 3/4 teaspoon of salt and 1 tablespoon of orange peel. Pour the sauce over the bread and cranberries, and chill it overnight before baking it at 325 degrees Fahrenheit for 30 minutes covered and another 30 minutes uncovered. Serve the strata with yogurt and warmed maple syrup.
