An easy vegetarian main dish recipe can be made with zucchini and carrots together with yellow squash for the Carrot, Zucchini, Squash Ribbons Recipe. The recipe, which was made by celebrity chef Paula Deen, is relatively easy to make, requiring a few other simple ingredients and it can be completed in under 15 minutes.
Carrot, Zucchini, Squash Ribbons
This simple recipe is loaded with great nutrition, such as a potassium, fiber, folate, biotin, vitamin K and vitamin A. Serve a healthy meal for six with this recipe.

- 3 large zucchini, peeled
- 2 large carrots, peeled
- 3 large yellow squash, peeled
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley leaves, minced
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 2 tablespoons butter
- 1/2 lime, juiced
- Slice the main ingredients
Slice the zucchini, carrots and squash into thin, ribbon-like strips. While slicing the vegetables into thin ribbons may be difficult for some, using a mandoline slicer will make this task easier.
Place a large skillet over medium-high heat and melt the butter. Add the garlic and cook for about 2 minutes. Add the carrot ribbons. Toss the zucchini and squash ribbons into the skillet, as well as the parsley, salt, pepper and lime juice. Cook for about 6 to 10 more minutes.
