One easy recipe using lime Jell-o is Food.com's lime Jell-o salad recipe. Another is the no-bake lime cheesecake from ChefInTraining.com. Substitute other brands of lime gelatin for the Jell-o in both recipes if desired.
To make lime Jell-o salad, dissolve two 3-ounce packages of lime Jell-o in 1 cup of hot water. Break up one 8-ounce package of cream cheese into the hot Jell-o, and pour the mixture into a blender. Blend the ingredients until they are smooth, and then add 1 1/2 cups of cold water, and blend again before pouring into an 8-inch square pan. Pour one 20-ounce can of un-drained crushed pineapple over the Jell-o mixture in the pan, and top with 1/2 cup of broken pecans. Cover the pan with plastic wrap, and refrigerate it before serving.
For the no-bake lime cheesecake, combine 1 cup of boiling water, 1 small package of lime Jell-o and 3 tablespoons of lime juice. Allow this mixture to partially set by placing it in the refrigerator for about 20 minutes. Meanwhile, cream together 8 ounces of cream cheese and 1/2 cup sugar in a small bowl and set aside. Once the Jell-o has partially set, add the cream cheese mixture, and beat to combine the ingredients.
Fold in 2 cups of whipped topping, and pour the mixture into a graham cracker crust. Cover and refrigerate until the cheesecake is firmly set.
