To make this sauce, combine 1/2 cup minced shallots, 1 teaspoon minced garlic, 1/2 cup dry white wine and the juice of one lemon in a saucepan. Heat the liquid until it boils; stir in 1/4 cup chopped fresh dill. Let the sauce cook for 3 minutes. Whisk in 1 teaspoon Dijon mustard and 1/2 cup heavy cream; continue cooking for 2 minutes.
Cut 5 tablespoons unsalted butter into cubes, and whisk the cubes into the sauce, one cube at a time. Add salt and pepper to taste. This sauce takes about 25 minutes to make, and is excellent served with fish and various types of seafood.
