An easy Laura Secord fudge recipe is 2 cups each of white and brown sugar, 3/4 cup cornstarch, 2 tablespoons of flour and a pinch of salt. Other ingredients are 1 teaspoon of baking powder, 2 tablespoons of butter, 3/4 cup milk or cream and vanilla flavoring to taste. Boil all of the ingredients together, and beat them with an electric mixer. Pour the fudge into an 8 by 8-inch pan. Allow it to cool completely before cutting into squares.
A second easy Laura Secord fudge recipe is called Maple Fudge and comes from the "Laura Secord Canadian Cookbook." To make it, bring 2 cups of maple syrup, 3/4 cup cream and 2 tablespoons of butter to boil in a saucepan. Boil the mixture until it reaches the soft ball stage, about 237 degrees Fahrenheit. Test the mixture by dropping some of it into a bowl of cold water. If the piece forms a firm but malleable ball, it is ready.
Allow the mixture to cool, untouched, until it is lukewarm. Beat it with an electric mixture until it is creamy and lighter in color. Pour the fudge into a greased 8 by 8-inch pan. When it is fully cooled, cut it into squares and serve.
