Easy kielbasa sausage dinner recipes include a skillet dinner, tomato rice with kielbasa, and kielbasa and broccoli linguine. Kielbasa sausage goes well with various combinations of potatoes, rice, pasta and vegetables.
To make kielbasa skillet dinner, coat a large skillet pan with cooking spray, add 1/2 chopped onion and cook for five minutes. Add 1 16-ounce package of sliced kielbasa to the pan, and cook for five minutes. Stir in 1/2 head of broccoli florets, 3 peeled and sliced potatoes, and salt and pepper to taste. Cook with no stirring for 15 minutes, stir and cook another 10 to 15 minutes.
For kielbasa with tomato, dice 1 kielbasa sausage link, chop 1/2 yellow onion, and brown in a skillet. In a saucepan, add 1 can each of fire-roasted tomatoes and water. Bring to a boil, add 1 1/2 cups dry rice, cover, reduce heat to low, and cook 20 minutes. Once rice is tender and has absorbed the broth, add in the sausage mixture, stirring well. Cover, and continue cooking for five minutes.
To make the kielbasa and pasta recipe, cut 1 package of kielbasa into 1/2-inch cubes and set aside. Cook 1 package linguine pasta according to package directions, and add 4 cups small broccoli florets to the pasta pot during the last four minutes of cooking. After broccoli and pasta are tender, drain and keep warm. In another large heated pot, cook the sausage and 1/2 cup chopped onion for three to four minutes until brown. Stir in 1 teaspoon hot sauce, and add the cooked linguine and broccoli, stirring gently for one minute.
Stir in 1 package refrigerated basil pesto, 1 package crumbled Gorgonzola cheese, 2 sliced green onions, and salt and pepper to taste. Heat through, and serve.
