Old South Jelly Roll Cake
This recipe yields between 8 and 10 servings, depending on how thick the jelly roll is sliced.

Heat the oven to 400 F. Beat the separated egg whites until firm and set aside, then beat the egg yolks until light, slowly adding the sugar and vanilla extract to combine. Add a sifted mixture of the flour, baking powder and salt and fold into the egg yolks with the egg whites.
Bake the batter in a wax paper-lined jelly roll pan for up to 10 minutes, or until golden in color. Remove from the oven and turn out onto a towel coated in confectioners' sugar, carefully removing the wax paper from the underside. Trim the crust and roll the cake up with the towel from the narrow end. Allow to cool for 10 to 15 minutes.
Finally, unroll the cake and remove the towel. Spread the surface with jelly and roll the cake back up, garnishing the top with a dusting of confectioners' sugar.
