For easy Italian spinach pie, organize 1 container of cottage cheese, 10 ounces of frozen spinach, 1 cup of shredded mozzarella, 4 eggs and 1/3 cup of grated Parmesan. Also, organize 1 jar of roasted red peppers and 1 teaspoon of dried oregano leaves. Bake the pie at 350 degrees Fahrenheit for approximately 40 minutes.
First, place the frozen spinach in a colander or similar vessel, and allow it to thaw and drain thoroughly before use. Drain any excess oil or marinade from the roasted red peppers, and set them aside. When selecting the cottage cheese, opt for a 2-percent low fat variety, such as Breakstone's or Knudsen. Next, crack each of the four eggs into a bowl, and beat them thoroughly.
Place all of the ingredients into a large mixing bowl, and preheat the oven to 350 F. Stir all the ingredients inside the bowl with a wooden spoon or spatula, integrating everything well. Spray the interior of a 9-inch round pie plate with non-fat cooking spray, and pour the ingredients from the bowl inside it, spreading everything evenly so that it cooks evenly as well. Bake for the allotted 40 minutes or until the center of the pie has set. Check the center with a cake tester, if desired, with a clean extraction indicating the pie is done.
