The Food Network offers a pasta recipe that takes only 17 minutes to prepare. Start by cooking 1 pound of linguine according to the package directions. Reserve 1 cup of the pasta water. Combine 1 cup of julienned sun-dried tomatoes, 1 cup of pitted green olives, 1 cup of fresh basil and 1 chopped garlic clove in a food processor. Add 1/3 cup of olive oil and the zest of 1 lemon. Process until blended but chunky. Add 3/4 cup of grated Parmesan cheese to the pasta, and pour the tomato mixture and pasta water over the top. Season with salt and pepper.
Another easy recipe is lemon pepper shrimp scampi. Cook 1 cup of orzo according to package directions. In a bowl, stir 2 tablespoons of chopped parsley and 1/4 teaspoon of salt into the orzo. While the orzo is cooking, melt 1 tablespoon of butter in a skillet. Sprinkle 1 1/2 pounds of peeled shrimp with salt. Add half the shrimp to the pan, and sauté for two minutes. Repeat with the remaining shrimp. Sauté garlic separately in butter, and add the shrimp, 2 tablespoons of lemon juice and 1/4 teaspoon of pepper. Serve over the orzo.
