To make a fast, flavorful homemade salsa, combine a can of tomatoes with chopped onion, jalapeño peppers, chopped garlic, cumin and salt. Add 1 handful of cilantro leaves, 3 tablespoons of lime juice and a pinch of sugar, and blend the mixture on high until it is smooth.
Taste the salsa and adjust the seasonings, if necessary. Optionally, stir in corn and drained, rinsed black beans. Although you can serve the salsa immediately, the flavor is even better if you transfer it to an airtight container and store it in the refrigerator overnight.
For a chunkier fresh salsa, chop approximately 1 pound of ripe plum tomatoes. Combine the tomatoes with 1/4 cup of chopped onion, 3 tablespoons of chopped cilantro leaves, 2 teaspoons of finely minced jalapeño pepper, 1 1/2 teaspoons of freshly squeezed lime juice and 1 minced clove of garlic. For less heat, remove the seeds from the jalapeño before chopping it. For extra richness, add 1/2 diced avocado to your homemade salsa, along with a pinch of cayenne pepper for added heat. Other optional ingredients include 1/2 cup of chopped green bell pepper, 1/2 cup of sliced green onions or approximately 2 cups of diced fresh fruit, such as pineapple.
