Easy haddock recipes include haddock Caribbean, baked haddock and fish and chips. The recipes use various methods of preparing haddock, including baking and microwaving the fish.
To make haddock Caribbean, place 2 haddock fillets in a microwavable dish. Sprinkle with 1/8 teaspoon of salt and 1/8 teaspoon of pepper. Cut a small tomato into 8 wedges, and place the wedges on the fish, along with 2 onion slices. Drizzle with 2 teaspoons of lime juice and 2 teaspoons of olive oil, top with 4 sliced green onions and microwave on high for four to five minutes. Serve with 4 slices of avocado and 2 lime wedges.
To make baked haddock, cut 2 pounds of haddock fillets into pieces, and place on a baking dish. Combine 1 cup of seasoned bread crumbs with 1/4 cup of melted butter, 2 tablespoons of dried parsley, 2 teaspoons of grated lemon peel and 1/2 teaspoon of garlic powder. Sprinkle the mixture over the fish, and bake at 350 degrees Fahrenheit for 25 minutes.
To make fish and chips, toss 16 potato wedges from 2 large potatoes with 1/4 cup of Italian dressing and 1/4 cup of seasoned coating mix from 1 packet. Bake for 20 minutes at 400 degrees Fahrenheit. In the mean time, spread 4 haddock fillets with 2 tablespoons of Miracle Whip, and bread the fillets with the rest of the coating mix. Add the fillets to the oven on the broiler pan rack, and bake for 15 minutes.
