Some easy Greek cookie recipes are kourabiedes, a type of almond and powdered sugar cookie, and koulourakia, a traditional butter cookie. The recipes consist mainly of butter, flour, eggs and sugar.
To make kourabiedes, cream 1 pound of softened unsalted butter for 20 minutes until it is light and fluffy, and then add in 1 large egg and 2 1/2 teaspoons of pure almond extract. Sift together 8 tablespoons of powdered sugar and 1/8 teaspoon of baking soda in one bowl and 5 1/2 cups of flour and 1 pinch of salt in another bowl. Add the powdered sugar to the butter mixture, and then slowly mix in the flour. Roll the dough into crescent shapes, and bake the cookies at 350 degrees Fahrenheit for 15 to 20 minutes. Dust the cookies with confectioners' sugar.
Another kourabiedes recipe adds roasted almonds, cinnamon and brandy to the dough and uses egg yolks instead of whole eggs.
Make koulourakia, another easy Greek cookie recipe, by whipping together 1/2 cup of butter and 1 1/4 sticks of shortening and then mixing in 3 eggs, 2 teaspoons of vanilla or almond extract and 2 cups of confectioner's sugar. After sifting together 5 cups of flour and 3 teaspoons of baking powder, fold it into the butter mixture. Roll the dough out, and either cut out shapes using cookie cutters or braid it in the traditional way. Brush the cookies with an egg wash, and sprinkle them with sesame seeds before baking them at 350 F for 12 to 18 minutes.
