Michael Symon's American ghoul-ash is an easy goulash recipe that serves two to four people. The preparation time is less than 30 minutes. The recipe uses basic ingredients such as ground beef, onion, elbow macaroni, diced tomatoes and Parmesan cheese.
To make American ghoul-ash, begin by cooking 1/2 pound of elbow macaroni as directed on the package. When the pasta is done cooking, drain it, reserving some of the pasta cooking water. Brown 1 pound of ground beef over medium-high heat. Slide the meat to one side of the pan, then add 1 sliced onion to the open side, and add salt to taste. Add 2 smashed cloves of garlic to the pan.
Mix the beef, onions and garlic together, then add 2 tablespoons of tomato paste and a 28-ounce can of diced tomatoes, and stir to combine. Season with 1 teaspoon of red pepper flakes. Add the cooked pasta and a small amount of the pasta cooking water to the pan, and mix together. Sprinkle 3 tablespoons of shredded Parmesan cheese over the goulash, and serve immediately.
For a different flavor, some goulash recipes add green peppers to the onions and ground beef. Some recipes also season the tomatoes with soy sauce, Italian seasoning, bay leaves or seasoned salt.
