The gingerbread cake recipe from the Food Network Kitchen is easy to make and tastes great. Molasses, ginger, cinnamon and cloves give this cake a sweet, spicy flavor.
To make the gingerbread cake, whisk together 1 cup of vegetable oil, 1 cup of sugar, 1 cup of unsulphured molasses and 1 to 2 tablespoons of minced crystallized ginger in a large bowl. Add 2 large room-temperature eggs, and whisk until the mixture is smooth. In another large bowl, whisk 3 cups of unbleached flour, 1 tablespoon of ground ginger, 2 teaspoons of ground cinnamon, 1 teaspoon of salt and 1/4 teaspoon of ground cloves. Add the molasses mixture to the flour mixture, and whisk together until the ingredients are well blended.
In a small saucepan, bring 1 cup of water to a boil. Remove it from the heat, and stir in 1 tablespoon of baking soda. Whisk the hot water mixture into the ingredients in the bowl until just blended. Add the batter to a lightly buttered 9-by-13-inch cake pan. Bake the cake in an oven at 375 degree Fahrenheit for 45 minutes, or until a tooth pick inserted into the center comes out clean. Allow the cake to cool on a rack before serving it with ice cream or whipped cream.
