Guy Fieri's roasted garlic aioli recipe is easy to make and has received many positive reviews. It calls for 2 to 3 seasoned heads of garlic to be wrapped in foil and roasted in an oven for 35 to 45 minutes before being combined with other savory ingredients.
To make roasted garlic aioli, preheat an oven to 425 degrees Fahrenheit. Meanwhile, cut the tops off of 2 or 3 heads of garlic so that the cloves inside are exposed. Place them on a sheet of aluminum foil, and drizzle them with extra virgin olive oil and add salt and pepper to taste. Wrap up the foil so that it forms a tight pouch, and place in the oven for 35 to 45 minutes. Carefully remove the garlic heads from the oven, and allow them to cool before squeezing the pulp from the skin.
Using a food processor, combine the roasted garlic with 1 cup of mayonnaise, 1/3 cup of fresh lemon juice, 2 tablespoons of grated Parmesan cheese, 1/2 tablespoon of Dijon mustard, 1/8 teaspoon of cayenne pepper, a dash of Worcestershire sauce and some salt and pepper to taste. Pulse the food processor until the mixture is well blended. Refrigerate the aioli for several hours to allow the flavors to combine.
